Thai chicken patties with sweet chilli sauce

Serves: 8
  • 500g chicken mince
  • 1 small zucchini, finely grated
  • 1 egg
  • 1 tbsp corrinader chopped
  • 1 tsp lime rind finely minced
  • 2 tsp fish sauce
  • Juice of half a lime
  • 2 spring onion stalks finely chopped
  • 2 tsp olive oil
  • ½ cup sweet chilli sauce
  1. In a large bowl, combine all ingredients except chilli sauce
  2. Using your hands form 2- 2.5 inch wide patties
  3. Heat oil in frying pan once oil is hot place patties in and good though flip once or twice
  4. Can be used on burgers or by themselves or in wrap use sauce when serving
