Ingredients
  • 1 cup quinoa
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 1 green capsicum chopped
  • 1 cup vegetable broth
  • 1 can diced tomatoes
  • 1 tsp chilli powder
  • ½ tsp cumin
  • ½ tsp oregano
  • ¼ tsp salt
  • 1 tbsp coriander chopped
Instructions
  1. Rinse and soak quinoa for about 10 minutes in warm water
  2. In a large pan heat oil over a high heat and sautéed onion and garlic. Add capsicum, broth, tomatoes, seasoning, and stir in quinoa. Bring to boil
  3. Cover and reduce heat to a simmer, cooking for about 20 mins or until broth is absorbed. Turn off heat and allow quinoa to sit for 5 minutes
  4. Top with coriander, serve and enjoy
