  • ¾ cup raw macadamia nuts
  • 1 cup almond flour or almond meal
  • 1 cup unsweetened fine desiccated coconut
  • 1 tsp ground ginger
  • ¼ cup honey
  • ¼ cup coconut oil melted
  • ½ tsp baking soda
  • 2 tbsp water divided
  1. Preheat oven to 160C, line two baking trays
  2. Arrange macadamia nuts on baking tray and bake for 8 mins to lightly toast, let cool and chop roughly
  3. Reduce oven to 120C
  4. In a large bowl combine dry ingredients
  5. In a small sauce pan, combine honey and coconut oil, and melt gently.
  6. In a small bowl mix baking soda with 1 tbsp of water. Add to honey mixture, once the mixture froth, remove from heat and pour into dry ingredients. Add 1 tbsp of water and stir well
  7. Spoon out mixture into about 12 cookies
  8. Bake for 25 minutes or until golden. Remove from oven and let cookies cool place in container for 1 week storage
