Lemon garlic zucchini noodles

Serves: 4
  • 4 large zucchini spiralized
  • 1 tbsp olive oil
  • 2 shallots diced
  • 4 cloves garlic minced
  • 2 cups chicken broth
  • 4 tbsp lemon juice
  • Zest of one lemon
  • 1 tsp chilli flakes
  • ½ ts sea salt
  • 1 tsp pepper
  • ¼ cup shredded Parmesan cheese
  1. Spiralize the zucchini then set aside on paper towel so the excess water is soaked up
  2. In a large pan on high heat put in olive oil and sautéed shallots and garlic, add chicken broth, lemon juice and zest, chilli flakes, and salt and pepper.
  3. Bring to boil and then turn down the heat and allow sauce to simmer till it reduce into half of it size about 15 minutes
  4. Add zucchini noodles in the sauce and cook for 3-5 minutes.
  5. Remove from heat, sprinkle with Parmesan cheese and serve
