Healthy cauliflower fried rice

Serves: 4
  • 1 head cauliflower chopped into florets
  • 1 small onion finely diced
  • ½ cup frozen peas
  • ½ cup carrot sliced
  • 2 eggs beaten
  • 1 tsbp sesame oil
  • ¼ cup soy sauce
  • ⅛ tsp ground ginger
  • 2 tbsp shallots(spring onion) chopped
  1. Put chopped cauliflower into food processor pulse until it looks like rice then set aside
  2. heat large wok put in oil, onion, peas, carrots and sauté until tender
  3. In a small bowl whisk soy sauce, ginger then set aside
  4. In the wok slide the veggies to one side then put in eggs and scramble until eggs are cooked then mix together with veggies
  5. Stir in cauliflower and pour soy sauce mix over top mix well and cook until cauliflower is soft
  6. Top with shallots and serve
