Ingredients
  • 1 tsp olive oil
  • 1 large onion
  • 2 garlic cloves minced
  • 450 grams ground turkey
  • 1 400g can diced tomatoes
  • 2 tbsp tomato paste
  • 1 400g can corn kernels
  • 1 400g can black beans
  • ½ tbsp chilli flakes
  • ¾ cup shredded cheddar cheese
Instructions
  1. Heat a non stick pan on medium heat add olive oil, onion, and garlic
  2. Add turkey, brown the meat season with salt and pepper
  3. Stir in diced tomatoes, tomatoe paste, corn kernels, black beans, and chilli flakes
  4. Cover with lid and cook for 10-15 mins
  5. Remove from heat and stir in cheese
  6. Serve topped with coriander and enjoy
  7. Can be served with sour cream and avocado on top
